What river should I do an overnight canoe trip in Colorado?

I'm looking for a river that has good fishing, great scenery, and no more than class III rapids. We are looking to go in late May. Any suggestions? Thanks in advance!

1. The Arkansas, Blue, and Colorado all have more than Class III. I'd suggest the Gunnison below the black canyon.
